What's the largest Trout you've caught in 2012?
Ernie Tate, pictured above from Jamul caught an 11 lb. 8 oz. Rainbow out of lake 3 on a nightcrawler.
Dillon Henderson, Photo #1 from La Mesa entered the double digit club with a 10 lb. 10 oz. Trout from lake 3 on powerbait.
Nik Sorenseene, Photo #3 from La Jolla landed a 9 lb. 4 oz. Trout out of lake 3 on a nightcrawler.
Craig Card, Photo #4 from San Diego reeled in a 7 lb. 1 oz. Trout from lake 4 on a nightcrawler.
Michael Delia, Photo #5 age 4 from Spring Valley caught a respectful 7 lb. Trout out of lake 3.
Ralph Ross, Photo #6 from El Cajon caught a 5 lb. 3 oz. Trout out of lake 3 on rainbow powerbait and nightcrawler.
Dillon Luke from Santee caught two Trout out of lake 2 using powerbait. Largest weighed 4 lbs. 8 oz.
All fish weighing 5 lbs. or larger will get you entered into the April 1st drawing for a flat screen TV.
The Park will be open New Year's Eve and New Year's Day.
Recipe of the Week:
Trout with Bacon
• 4 slices thick bacon
• 4 (8 ounce) trout, cleaned, heads and tails on
• 1 cup yellow cornmeal
• salt & freshly ground black pepper
• 1/3 cup vegetable oil
Directions:
1. Fry bacon in a large heavy skillet over medium heat until crisp and golden brown, about 15 minutes.
2. Drain on paper towels and set aside, reserving bacon fat in pan.
3. Rinse fish, then dredge in cornmeal and season both sides to taste with salt and pepper.
4. Add vegetable oil to the bacon fat, then heat pan over medium high heat until oil is hot.
5. Working in batches if necessary, fry fish in combined fat and oil on one side until skin is golden and crisp, about 5 minutes.
6. Carefully turn fish over and cook other side for 5 minutes more.
7. Serve garnished with bacon.
Night Fishing (registered campers only, lakes 6&7)
** No California State Fishing License required to fish at Padre Dam's Santee Lakes Recreation Preserve.
Fishing Permit Fees
Adult (ages 16 and over) $9.00 per day
Junior (ages 7 to 15) $6.00 per day
Second fishing pole stamp $4.00
*One child under 7 may fish for free with a paid adult
