BASS:
The Bass bite has been great this summer. The Bass might have a chance to rest now that most schools are back in session. Lake 5 was the hot lake for Bass action. Frogs, swimbaits, Senkos and live nightcrawlers have all worked well.
Come fish the evening Bass bite this upcoming Thursday during the Lakes final Nightfishing Event of the summer. Open till 11:30 pm. Don't miss this rare opportunity.
CATFISH:
Santee Lakes has stocked 16,000 lbs. of Catfish so far this summer. Next stock is due to arrive this Friday, August 23rd. A portion of this stock will go into camper lakes 6 and 7. Check out www.santeelakes.com for camping options.
Recipe of the Week:
Fried Catfish on a Stick
Ingredients
• 4 catfish fillets (about 4 ounces each)
• 12 (10-inch) bamboo skewers
• 1 tablespoon Creole Seasoning, recipe follows
• 1/2 teaspoon salt
• 1/8 teaspoon cayenne
• 2 tablespoons Creole or whole-grain mustard
• 1 cup buttermilk
• 4 cups vegetable oil
• 2 cups bleached all-purpose flour
Directions
Cut each fillet lengthwise into 3 strips, each about 1 1/2 inches wide. Thread each strip onto a skewer. Lay them in a shallow bowl. Combine 1 teaspoon of the Creole seasoning, the salt, cayenne, mustard, and buttermilk in a small mixing bowl and stir to blend. Pour the mixture over the catfish, cover, and refrigerate for 8 hours. Remove the fish from the refrigerator. Heat the oil to 360 degrees F in a large deep cast-iron skillet. In a large mixing bowl, combine the flour and the remaining 2 teaspoons Creole seasoning. Dredge 2 to 3 skewers at a time in the flour, shaking off any excess. Fry them in batches until golden brown, about 4 minutes on each side. Drain on paper towels.
Night Fishing (registered campers only, lakes 6&7)
** No California State Fishing License required to fish at Padre Dam's Santee Lakes Recreation Preserve.
Fishing Permit Fees
Adult (ages 16 and over) $9.00 per day
Junior (ages 7 to 15) $6.00 per day
Second fishing pole stamp $4.00
*One child under 7 may fish for free with a paid adult
